Default categories + confirm dialog STAGING

Next-Phase n7 (Narong). Verified on demo.staging 4/4 + staging smoke 5/5.

(1) The default coffee-shop category set is now Narong's list, and (2) his new requirement — the Categories page "Use default categories" button now opens a confirmation dialog before populating (it applied instantly before). Both the Categories page and the register-add prompt share one list + the idempotent apply action. No migration.
