Configurations — regrouped nav & Categories management (prod)

Test-run red item #2 (Regroup Configurations). Captured from lumiere-coffee.nixtech.app.

Gate 2 8/8 passed · 51/51 regression. (1) The flat Configurations nav is now grouped into 5 labelled sections — Store, Catalog, Payments, Hardware & Display, System. (2) New Catalog → Categories page to view all product categories with their product counts and add / rename / delete / drag-reorder them (the order drives the POS category-filter dropdown). Scoped to native categories; settings.edit-gated and audited. Rename/add/delete were driven through the deployed UI (DB-verified); reorder verified via the DAO. nix-cafe ee303da, no migration (table + DAOs already existed).
